Nenad Tomić, owner and founder of the Baristocratia brand
Imagine owning a cafe where one person prepares and serves customers 24/7 and only with the highest quality products. Now that`s possible, because that "person" is a robot that talks and works for free! It is an innovation, unique in Southeast Europe, brought by the Baristocratia brand. As they say, this does not start a business, but a revolution. We talked about the Baristocratia Revolution project with Nenad Tomić, the brand`s owner and founder.
The coffee-making robot is the first of its kind in Europe. How long did it take to develop a solution like this, and where did the idea come from?
- The robotic kiosk that prepares coffee, coffee drinks, tea, hot chocolate, milk shakes and ice cream is the first 100% automated device assembly with artificial intelligence. It recognizes 40 languages, charges and serves without human presence and is the first of its kind in Southeast Europe. For three years we have been developing, setting, calibrating, programming in order to achieve a fast and efficient automated service of the aforementioned drinks, so that their taste is of high quality.
How does the robotic cafe work?
- It functions as a kiosk that has a 2x2 m area, an independent water supply and drain with the necessary 8 kW connection. The kiosk is an assembly of a payment system, a robot with artificial intelligence that speaks and responds, serves from a coffee machine and an ice cream machine. It has independence of 400 drinks without refilling. The filler fills the kiosk with products and packaging every morning, and more often as needed. He monitors all of this through a special application, which he uses in real time, and a video camera, in order to have an overview. The kiosk has an interactive screen for product selection, and a maximum of four drinks can be ordered in one order. The average serving time per drink is 60 seconds. Payment is made using a payment card.
How do you grow the market? Are there already locations where we will be able to see the robots in action?
- We showed the market the possibilities of robots at the recently held tourism and hospitality fair in Belgrade. We introduced the Baristocratia Revolution franchise to potential investors, which would handle charging, controlling and maintaining the kiosk robots for them.
Locations will be defined in two places soon. The solution is suitable for shopping centers, museums, railway stations, airports, large business centers, tourist spots.

Why should someone invest in this innovation? What are the advantages and when is the return on investment?
- The innovation is primarily intended for all those who have a surplus of uninvested money, because the investment is returned faster than any construction venture. It enables easier control and great operability. These are high-margin products without three-shift employees. Expected investment return is 1.5 years.
"Tomorrow is here today" is your motto. How do you see the application of smart technologies and automation in hospitality at the moment and what do you expect in the future?
- I believe that this is just the beginning of automated service processes, so that very soon, in two or three years, both ours and other similar products will receive an improved offer of various services. Our project goes in the direction of tourism and assistance to tourist spots, gas stations, beaches, aqua parks, self-service restaurants.
What are the plans for the future, are you preparing any more innovations?
- Plans for the future are in the direction of expansion in the Balkans with a recognizable brand of robotic service that offers high quality products. Innovations will be related to multifunctional services such as serving drinks, but also development in tourism, i.e. the need for tourist needs and satisfaction of tourists` needs.
