Pumpkin is a one-year plant stemming from Mexico and brought to Europe by the Spaniards. Its fruit and seeds are healing. This vegetable is extremely important because of high level of oil in the seed (about 50%) dominated by essential fatty acids (n-6 and n-3 family) that cannot be synthesized by human body. Apart from oil, the seed contains an important amount of proteins (34-45%), vitamins A, B1, B2, B6, C, D, E and K, minerals (particularly phosphorus and zinc) as well as a considerable level of essential polyunsaturated fatty acids such as the ones from n-6 and n-3 family. They are important for normal growth and development of numerous functions of human body, including reproduction. Thus, this oil belongs to the group of the most quality, nutrition supported oils (side by side to line seed and hump seed oil). They are oils of vegetable origin and alongside with fish oils represent rich sources of essential n-3 fatty acids that modern nutrition scarcely uses. According to medical research, they protect the human body from infections, they strengthen the immuno-biological response and protect the human heart and the cardiovascular system. Many research studies in the world and locally showed that linoleic acid decreased the level of total cholesterol and DL partials (“bad cholesterol”) while n-3 fatty acids decrease the level of triglycerides, but at the same time increase the level of HDL partials (“good cholesterol”). |

FOOD PREPARATION |
Pumpkin seed oil is very tasteful and therefore successfully used in cuisine such as salad dressings, with boiled vegetables, rice, mushrooms, pasta and meat as well as in baking for pastry and cakes. Not to forget that we are talking about cold pressed oil, made in a process that has not changed the nature of essential fatty acids and thus preserves a high oil quality. It is kept in cold and dark places in well sealed bottles although it is much more rancid resistant and expires in two years. It is recommended to take a spoonful twice a day, in the morning and in the evening. |
