BioSense Institute scientist gets grant from prestigious American organization

(Dr Ivana Gadjanski) Dr Ivana Gadjanski of the BioSense Institute is a recipient of the prestigious grant of the famous US organization called the Good Food Institute. She is one of the 14 recipients of this grant, which is awarded for researching alternative meat production.
Gadjanski's project entails the most modern global research in the field of cell farming in order to secure sufficient amounts of food for the growing world population. Cell farming proposes innovative methods of meat production in laboratories through the cultivation of cells extracted from animals' muscle tissue.
– Cultivated meat products will not feature added antibiotics, hormones or other additives that are present in widely available meat. Also, it is important to note that this way of production is much more humane to animals, because, even through the cell sample is extracted from a live animal's muscle, the procedure is painless – Gadjanski said, commenting on the grant.
She adds that it's very important that this process uses much fewer resources than traditional farming and that it also reduces the environmental impact and the emission of toxic gases, which undoubtedly cause climate change.
Unlike cultivated meat products, those based on plant proteins have been available in stores for some time now. The sensors that the BioSense team will be developing will enable a real-time reading of the data, therefore facilitating quality control and reducing the costs of production of cultivated meat. This way of production is also expected to accelerate the commercialization of this kind of alternative proteins, which carry a great potential of leading to a real revolution in food production globally in the upcoming years.
Dr Gadjanski spent a year as a Fulbright Guest Professor at the Columbia University at the world's most famous tissue engineering laboratory, after which she returned to Serbia, where she is currently applying the knowledge she has acquired. She has been a member of the BioSense team since 2017.
